Grandi operazioni in Strada Pennella

Approfittando della relativa calma di questo periodo, fervono i lavori in Acetaia.

Innanzitutto le ultime batterie adottate, sono state svuotate dell'aceto forte di vino, pulite e riempite prima di essere posizionate al piano superiore, per l'inizio della loro lunga relazione (d'odio e d'amore) con il tempo e con le temperature estreme del fienile.

Taking advantage of this calm moment, odd jobs and other are going on in the Acetaia.
To begin, the first sequenced barrels which have been adopted, have been emptied out from the wine vinegar, cleaned and filled before being placed upstairs where they will begin that long love-hate relationship with time and harsh temperatures inside the cellar.

La gomma che versa e' alta per far vedere il flusso MA va tenuta sempre a contatto con il legno per evitare che faccia degli schiumoni da paura!
That rubber which pours is raised high in the picture to show the flow BUT it needs to be kept low and closet o the wood as to reduce any risk of foam.

Ma attenzione! Puo' capitare che alcune botticelle siano ancora un po' insicure e allora piangano un po', prima di partire per questa avventura (detta "Maturazione" ed "Invecchiamento").
Ecco qui, le lacrime di una piccola botticella di rovere ... che commozione..
