Aspettando le visite ispettive

Da quando e' scoppiata un po' tutta il bailamme sul Balsamico (il Balsaimme?), e' normale vivere con quella sana tensione propositiva (terrore) per una visita ispettiva da parte dei Nas (anche se io vorrei i Ris4 che mi piacciono molto).


Dalla settimana scorsa si aggiunge l'attesa degli ispettori della Repressione Frodi.
Sembra che abbiano una bella lista di 80 e passa Acetaie tra Reggio e Modena da verificare NON tanto per quanto riguarda l'aspetto produttivo MA, badate bene ... per la denominazione/etichettatura dei Condimenti.
Ma come? Che c'azzecca? E' storia vecchia che il Condimento (quel prodotto "figlio di nessuno", senza tante regole ecc.. ma che fa la fortuna di tante Acetaie) non si potesse accostare al termine "Balsamico" + altre caratteristiche tali da poter trarre in inganno e confonderlo con il Tradizionale (o il Balsamico di Modena industriale). In questo senso la sentenza a sfavore di Cavalli e Picci di inizio anni 90, era l'unica decisione in merito.

La cosa "buffa" e' che da quel momento, con ogni buon proposito possibile, era stato costituito un "Consorzio per il Condimento Alimentare Balsamico" (entrarvicisivi tra l'altro costava qualche migliaia di Euro ...!!) proprio per arrivare a dare un riconoscimento, un disciplinare, una "dignita' ufficiale" al Condimento.

Ebbene, dato che una gran ufficialita' non e' mai arrivata (chenneso', dal Ministero ad esempio), tutti quelli che hanno aderito a quel Consorzio ed hannno osato chiamarlo Condimento (alimentare) Balsamico o che cmq abbiano utilizzato impropriamente il termine "Balsamico", si vedranno notificare una sanzione di qualche migliaia di euro.

Noi abbiamo adottato la strada del "fai da te", nel senso che i nostri Condimenti si chiamano con nomi di fantasia: Condimento San Giacomo, Agro di Mosto, Essenza ad esempio.

Ma solo perche' abbiamo una gran fantasia :-)

Vedremo se dovessero rilevare "altri elementi" che potrebbero trarre in inganno.
Spero di no, visto gli sforzi che facciamo per essere " un po' " trasparenti sulla questione!

Intanto accendiamo ceri ed incensi propiziatori ... il tutto, sia chiaro, solo perche' NONOSTANTE NOI SI SIA IN REGOLA IL PIU' POSSIBILE ... se c'e' un'ispezione c'e' quella convinzione popolare-radicata che "comunque vada, qualcosa lo tirano fuori!"

Awaiting the Inspectors!!
Ever since this chaos on traditional balsamic vinegar exploded, I believe it’s normal to live with that anxiety on the arrival of the NAS’ inspective visit. ("U.S Food and Drug Administration" (FDA)and in UK "Health and Safety Executive" (HSE).
From last week onwards we have also been waiting for the fraud repression inspectors.

Apparently they have a list of 80 or more Acetaie between Reggio e Modena to check on, NOT to control and check on production BUT, pay attention: regarding the denomination-tagging of condiments.

What? What do condiments have to do with this? It’s an old story that Condiment (product that doesn’t have clearly defined “parents” but that means safety for many Acetaie) can’t be called Balsamico or look like it, have characteristics similar to the Traditional Balsamic Vinegar that could “trick” buyers confusing them with the original. In this sense the verdict against Cavalli and Picci in the early ‘90’s was the only decision made concerning this matter.
The funny thing is that ever since that day, with positive intentions, a consortium was created “Consortium for the Balsamic Condiment” (becoming part of it cost some thousand euros….!!!) in order to give an official recognition and “official dignity” to all Condiment.

Well, since this official moment never arrived, all those who were part of the Consortium and dared calling it Balsamic Condiment or used the term balsamic inappropriately will receive a sanction of some thousand euros.
We did it our way, in the sense that our condiments have made up names such as: San Giacomo Condiment, Agro Di Mosto or Essenza for example.
But only because we have a wild imagination!

Let’s see if they should find any other elements that could trick us. I hope not, since we do our best to be clear on the matter!
In the meantime let’s cross our fingers…..only because although we respect laws and rules as much as possible……when these inspections arrive there’s that feeling that “they always find something!!” :-)
